With summer just round the corner it won’t be long before we’re all heading outside to enjoy a chilled glass of Prosecco over a barbeque. A barbecue is a great way to catch up with friends, enjoy the sunshine and share recipes around the grill. One thing we cannot forget when serving grilled chicken or meat is a great sauce. And one of the most popular sauces to combine with meat or poultry is mayonnaise.

Homemade mayonnaise is deliciously addictive. It’s fresh, bright yellow, smooth and so much more luxurious than the stuff in a jar!

Here are some tips to create the perfect mayo

- All the ingredients must be at room temperature

- To determine the expiry date of your mayo look at the expiry date of the eggs used and add a week.

- Don’t use extra virgin olive oil as the flavour is too strong and can overpower the mayonnaise. Use regular olive oil instead.

Keeping the above tips in mind, we are now ready to make the perfect mayonnaise!

Basic Mayonnaise Recipe

Makes 2 cups

Ingredients

- 2 free range egg yolks (use very fresh eggs)

- 2 tablespoons of red wine vinegar

- 1 tablespoon of lemon juice

- 2 teaspoons of mustard

- 1 teaspoon of salt

- 500 ml of olive oil

Directions

Put egg yolks, red wine vinegar, lemon juice, mustard and salt in the blender running slowly until they area all mixed together. Then, with the mixer still running slowly, add the olive oil very slowly. You should take at least three minutes to add all the olive oil – so be patient! If your ingredients were all at room temperature and you were patient, you will be rewarded with a beautiful creamy mayonnaise! If your mayonnaise it’s too thick just add a tablespoon of warm water to thin it down.

Roasted Red Pepper Mayonnaise

Combine ½ cup of mayonnaise, 1/4 cup of finely chopped roasted red pepper and 1 tablespoon of chopped fresh parsley

Pesto Mayonnaise

Combine 1/2 cup of mayonnaise and 1 tablespoon plus 1 teaspoon of pesto

Pink Mayonnaise

Combine ½ cup of mayonnaise and ½ cup of ketchup

Herb Mayonnaise

2 and 1/2 tablespoons of chopped herbs (try chive, dill, tarragon, oregano, thyme)

Garlic Mayonnaise

½ cup of mayonnaise and 1 tablespoon of garlic paste.
